Gumbo sausage

I've been making my own vegan sausages for a while. We eat hot dogs every other week or something so it's a good opportunity to keep concocting new flavors and trying stuff out. I'm making sage/fennel sausages tonight, but as I was going through my spice rack, I saw the filé and I had a flash: Gumbo sausage. Gumbo dogs. I won't make this now because it'll be labour intensive, but that's idea I'm putting on the list for the future.

What kind of sausage flavours do you like? What would you like to taste?
