There is a large South Asian community in the town just over from me - tons of tech workers here due to Research Triangle Park (sort of a mini silicon valley) - so there are a LOT of Indian restaurants, and definitely some that are not the normalized "Indian food." Maybe look for the tech hubs in your region? Food follows the people.
